Questions people ask

What is the difference between a box grater and a flat grater?

A box grater is a four-sided hollow box with different grating textures on each face. It stands upright on a cutting board while grating, and grated material falls into or collects at the bottom. It handles large volumes of cheese, vegetables and citrus zest efficiently and stores compactly by standing on its base. A flat grater (also called a paddle grater or plane grater) is a single flat panel with one grating texture, held at an angle over a bowl or cutting board while grating. Flat graters allow better visibility of the food being grated and are easier to clean because both sides are accessible. A box grater is better for large grating tasks (a block of cheddar for nachos). A flat grater is better for precision tasks (grating just enough Parmesan over pasta at the table) and for storage in a flat kitchen drawer.

How do I grate cheese without it sticking?

Soft cheeses like mozzarella and string cheese stick to graters because of their high moisture content. To grate soft cheese without sticking: freeze the cheese for 15 to 30 minutes before grating. Cold temperature firms the cheese so it passes through the grater blades more cleanly rather than smearing. A light spray of non-stick cooking spray on the grater surface before grating also reduces sticking. Alternatively, toss grated soft cheese immediately with a small amount of flour or cornstarch (one teaspoon per cup of shredded cheese): the coating prevents the shreds from clumping or sticking to the bowl. Hard cheeses like Parmesan, aged cheddar and Gruyere do not stick significantly because their low moisture content allows clean blade contact. For all cheeses, clean the grater immediately after use: cheese protein bonds to the metal and becomes significantly harder to remove after it dries.

Can I put a cheese grater in the dishwasher?

Most stainless steel cheese graters are dishwasher-safe. OXO Good Grips, KitchenAid and Microplane graters are all listed as dishwasher-safe by their manufacturers. The high-temperature water and detergent in a dishwasher removes cheese protein more effectively than hand washing. The main risk with dishwasher cleaning is the grating blades contacting other metal items in the basket, which can dull or chip the fine blade edges over time. To protect blade sharpness in the dishwasher, place graters in the utensil basket with the blade side facing in (away from the basket walls) or place them flat on the top rack where they do not contact other utensils. Wooden or plastic-handled graters should be hand-washed: the high heat and moisture in a dishwasher cause warping, cracking or discoloration in wood and some plastics.
