Vegetable Peelers

Y-shaped and swivel peelers for carrots, potatoes, cucumbers, apples and thin-skinned vegetables.

Vegetable peeler blade orientation determines which grip and motion is most comfortable for the task. A swivel peeler (straight peeler) has the blade at the same angle as the handle and is used with a push-away or draw-toward motion along the length of the vegetable; it is the style most people learned on. A Y-shaped peeler (Yorkshire peeler) has the blade perpendicular to the handle and is used with a draw-toward motion; many cooks find it faster for peeling large quantities of carrots or potatoes. A julienne peeler attachment produces thin julienne strips for vegetable noodles and salad garnishes. Carbon steel blades stay sharper longer than stainless but require drying after use to prevent rust.
