Tea quality and brewing results depend on leaf grade, water temperature, steep time and infuser design. A Japanese green tea brewed at boiling water temperature becomes bitter because the high temperature extracts bitter catechins; the same tea brewed at 160 to 175 degrees Fahrenheit produces a sweet, clear cup. An infuser with large mesh holes releases broken leaf particles that increase astringency.
