How do I keep zucchini noodles from getting watery?

Zucchini noodles release water when heated because zucchini is approximately 95% water by weight. To minimize water release: salt the spiralized zucchini in a colander (1 teaspoon of salt per 2 zucchini), toss to coat and let it drain for 15 to 30 minutes; the salt draws out water through osmosis before cooking. Pat dry with paper towels after draining. Cook over high heat in a hot pan for no more than 1 to 2 minutes: short cooking time at high heat limits water release. Avoid adding the noodles directly to a sauce in a pan on low heat, which allows time for water to continue releasing into the sauce.
