What temperature should steak be when pulled off the grill?

Steak internal temperatures depend on the desired doneness level. What is the safe internal temperature for chicken on the grill?

Chicken must reach 165F internal temperature at the thickest part of the breast or thigh, away from any bone, to be safe to eat. The USDA Food Safety and Inspection Service sets 165F as the minimum safe internal temperature for all poultry. Chicken thighs actually eat better at internal temperatures of 175F to 185F, because the higher temperature breaks down connective tissue and collagen in the thigh meat, producing a more tender and juicy result than stopping at 165F. Chicken breast becomes dry above 165F, so stopping at exactly 165F to 170F produces the best breast texture. Check the thickest part of the breast or thigh with the probe inserted horizontally from the side rather than from the top, avoiding contact with the bone which conducts heat faster than the meat and produces a falsely high reading.

How do I calibrate a grill thermometer?

Verify a grill thermometer's accuracy with an ice-water test: fill a glass with ice and add enough cold water to submerge the probe tip. Stir the water and let it sit for 30 seconds. Insert the probe into the ice water without touching the sides or bottom of the glass. A calibrated thermometer reads 32F in ice water at sea level.
