Questions people ask

Should I peel garlic before using a garlic press?

Most modern garlic presses work with unpeeled garlic: the pressing mechanism separates the garlic flesh from the skin during pressing, pushing the flesh through the holes and leaving the skin in the chamber. OXO Good Grips, Zulay, Joseph Joseph and most other current garlic presses all specify unpeeled operation. This is a significant convenience advantage over older presses that required peeling. To use an unpeeled press: place a whole unpeeled clove into the pressing chamber, close the handles and press firmly. The garlic passes through the holes while the skin remains in the chamber. Open the press and discard the skin. The resulting pressed garlic is ready to add to the dish. If the clove is significantly larger than the chamber, cut it in half first: forcing an oversized clove causes the press to compress the chamber unevenly and extract less garlic.

Is a garlic press better than mincing garlic by hand?

A garlic press and hand-mincing produce garlic with different textures that behave slightly differently in cooking. A garlic press produces very fine minced garlic with a cell-rupturing level of processing: the pressing action breaks more garlic cells than knife mincing, releasing more allicin and producing a stronger, more intense garlic flavor in the finished dish. Hand-mincing with a knife produces larger garlic pieces with a softer garlic flavor that disperses less uniformly through a dish. For dishes where a strong, fully distributed garlic flavor is the goal (garlic bread, aioli, pesto, roasted garlic pasta), a press produces more intense flavor from fewer cloves. For dishes where the garlic should melt into the background or where visible garlic pieces contribute texture (stir-fry, braised meats), hand-minced garlic performs better. The press also takes 5 seconds per clove versus 30 seconds to properly mince one clove by hand.

How do I clean a garlic press quickly?

Garlic press holes clog with garlic skin and pressed garlic residue after each use. For quick cleaning: rinse under hot running water immediately after use before garlic dries in the holes. Use the press's built-in cleaning comb (if included with Joseph Joseph or OXO models) to push residue through the holes from the back. Without a built-in cleaner, an old toothbrush runs across the front of the pressing holes to dislodge dried garlic. A toothpick or bamboo skewer clears individual holes that remain clogged. Most stainless garlic presses are dishwasher-safe: placing them in the utensil basket with the holes facing down allows water to flush residue from inside the holes. The main mistake with garlic press cleaning is allowing pressed garlic to dry in the holes: garlic protein bonds to the metal and requires significantly more scrubbing when dry versus wet.
