Does stainless steel absorb garlic odors?

Stainless steel does not absorb garlic odors in the way that plastic and wood do. Garlic's sulfur compounds (allicin and related molecules) bond to porous materials like plastic and wood at a molecular level, which is why plastic cutting boards and wooden handles retain garlic smell after washing. Stainless steel is non-porous: garlic compounds sit on the surface rather than penetrating the material, and washing removes them completely. However, stainless steel must be rinsed quickly after garlic contact: if garlic juice dries on stainless, the sulfur compounds begin to oxidize and etch the surface microscopically, creating more surface area for the next use to bond to. Rinsing stainless garlic tools within a few minutes of use keeps the surface fully non-reactive to garlic odors indefinitely.

Will a stainless garlic press rust?

Stainless steel garlic presses do not rust under normal kitchen use. Stainless steel contains at least 10.5% chromium, which forms a passive chromium oxide layer on the surface that prevents oxygen and moisture from reaching the iron in the steel. This passive layer prevents the rust reaction. However, stainless steel can show rust spots under two conditions: chloride exposure (seawater, heavy salt deposits, or leaving the press soaking in salted water for hours) and contact with other rusting metals (cross-contamination from a rusting pan stored against the press). To prevent rust on a stainless garlic press: do not soak in heavily salted water, dry the press after washing rather than leaving it wet, and store it away from cast iron or other rusting tools. 18/10 stainless (18% chromium, 10% nickel) resists corrosion better than 18/0 stainless.

How much garlic does one press of a garlic press produce?
