How does a garlic press work with unpeeled garlic?

A garlic press designed for unpeeled operation uses a pressing plate geometry that forces garlic flesh through small holes while preventing the skin from passing through. When an unpeeled clove is placed in the chamber and the handles are pressed closed, the pressing plate compresses the clove: the soft interior garlic flesh is forced through the holes (which are smaller than the thickness of garlic skin), while the skin (which is tougher and larger than the holes) remains in the chamber. After pressing, the chamber contains a flattened garlic skin sheet that can be discarded. Not all garlic presses handle unpeeled garlic equally: presses with very small holes may allow some skin fibers to pass through into the pressed garlic. A press with hole sizes of approximately 1.5mm to 2mm produces clean pressed garlic with no skin in the output. Larger holes (3mm or more) may allow some skin fragments through.

Is pressing unpeeled garlic less flavorful than peeled?

Pressing unpeeled garlic produces slightly less output volume than pressing peeled garlic from the same clove: approximately 10 to 15% of the garlic flesh adheres to the inside of the skin and does not pass through the press holes. This means that unpeeled pressing wastes a small amount of garlic compared to peeled pressing. However, the flavor of the pressed garlic that does pass through the holes is identical whether the clove was peeled first or not, because the pressing action itself (not the presence of the skin) determines the garlic's flavor intensity. The skin does not impart flavor to the pressed garlic. For recipes that call for a specific quantity of pressed garlic, using peeled cloves provides slightly more predictable output volume than unpeeled.

What size garlic cloves fit in a standard press?

Most standard garlic press chambers accommodate cloves up to approximately 15 to 18mm in diameter. A typical supermarket garlic clove from a standard white bulb (Allium sativum softneck) measures 10 to 14mm in diameter and fits any standard press. Jumbo-size garlic cloves from large California bulbs or Spanish garlic measure 15 to 20mm and may not fit all standard chambers. Elephant garlic (Allium ampeloprasum) cloves are significantly larger (20 to 30mm) and require a large-chamber press like Pampered Chef or must be trimmed in half before pressing. To check if a clove fits: place it in the open chamber before closing the handles. A clove that sits fully inside the chamber with the lid able to close flat will press cleanly. A clove that forces the lid up at an angle when almost closed is too large for that press.
